Had a hectic day at work? Wish to eat something super yummy but too tired to cook? Well, here’s a simple recipe to make delicious and super healthy vegetable pancakes.

INGREDIENTS:

• 1 semolina

• ¼ cup curd

• ½ tsp salt

• ¾ cup water

• 2 tsp oil

• ½ onion (finely chopped)

• 1 carrot (finely chopped)

• ½ capsicum (finely chopped)

• 3 tbsp sweet corn

• 5 beans (finely chopped)

• ½ tsp chilli flakes

• ½ tsp salt

• 2 tbsp coriander (finely chopped)

• ½ tsp Eno / fruit salt

• 2 tbsp water

• oil (for frying)

INSTRUCTIONS:

1. To begin, combine 1 cup Rava, 1/4 cups curd, and 1/2 teaspoon salt in a large mixing bowl.

2. Mix with 3/4 cup water until a smooth batter is formed.

3. Cover and set aside for 10 minutes to allow flavours to meld.

4. 2 tsp oil, heated in a pan, sauté 1/2 onion until it changes colour somewhat.

5. 1 carrot, 1/2 capsicum, 3 tbsp sweet corn, 5 beans, 1/2 tsp chilli flakes, and 1/2 tsp salt are also added.

6. Sauté for a minute, making sure that all of the vegetables remain crisp.

Mix the vegetable mixture and 2 tbsp coriander into the Rava mixture thoroughly.

8. Mix in 1/2 tsp Eno and 2 tbsp water until a foamy batter forms.

9. Moreover, heat 3 tsp oil in a pan and spread the Rava batter evenly.

10. Cover and cook for 3 minutes, or until the base is thoroughly roasted.

11. Roast on the other side on medium heat.

12. Finally, serve with chutney or sauce a vegetable pancake or Nutri roastie.
